Pacina

Pacina is sited in a 10th Century building which used to be a convent. It is surrounded by vineyards, groves, fields and woodlands, all contributing to the vast biodiversity of the land. Stefano and Giovanna Tiezzi run the farm that first belonged to Giovanna’s great-grandparents. They renounced the Chianti appellation, feeling that the DOC/DOCG regulations were tailored to the needs of larger, commercial wineries rather than to those of small, family-owned ones.

The non-interventionist strategy that Giovanna and Stefano apply when tending to the vineyard is also very present in the cellar: concrete tanks are used for natural fermentations with indigenous yeasts and bacteria. Their respect for the land and its fruits translates into wines that bring us back to a type of Chianti as it was made in the pre-industrial era.
